Cinnamon is a combination of dried bark off dried trees in the cinnamon family.  Cassia tree is one of the most trees of which the cinnamon is derived from.  Cinnamon comes in whole and ground.  The cinnamon sticks are often rolled pressed and dried where as the cinnamon ground is the one mostly used and popular known especially in baking.

Cinnamon is mostly grown in Sri Lanka.  Other countries that grow cinnamon are China, Indonesia and Central Africa.  There are also other countries that grow it.

Tastes, Flavour and Aroma
It’s taste is usually sweet and has a woody fragrance.  The ground cinnamon has a warm flavour.

Uses of Cinnamon in cooking
Cinnamon is popularly used in baking, especially in cakes, cookies and desserts.  It can also be added to meat dishes especially works well with lamb.  The Middle Eastern culture is very popular with cinnamon for being used in their savoury chicken.  Cinnamon sticks are usually used in hot beverages.
